Recipe Share: Chicken, Avocado, and Lime Sandwiches

 I make this meal so often; I love it. It's so tasty and satisfying. My friend, Elizabeth is the creator of this recipe. I love all of her recipes. Check out her blog here.  Here's the recipe . 4 chicken breasts (I actually like to slice two breasts in half because they're so large) 4 slices Swiss cheese 2 avocados, sliced 2 tomatoes, sliced 4 Kaiser rolls (or hamburger buns) - I like to use Orowheat Sandwich Thins, toasted 1 lime Dressing (recipe below) Drizzle chicken breasts with canola oil and season generously with salt and pepper (you can also marinate the chicken in lemon/lime juice, oil and salt and pepper for a few hours but I often don't think ahead that far in advance). Grill chicken until almost done (this takes me about 10 minutes because I half mine). These cookies were a spur of the moment decision, and boy, was I happy when I tasted them. I always turn to my friend Elizabeth's blog when I want to bake (or cook). She has wonderful recipes for cookies and cakes, and all sorts of yummy things.  Here's the recipe from her blog: Ingredients : 1 cup butter 1 1/2 cups sugar 2 eggs 1 teaspoon vanilla extract 2 3/4 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/4 teaspoon salt Rolling Mixture : 1/2 cup sugar 2 Tablespoons cinnamon Directions : Preheat oven to 325 degrees.  Cream butter and sugar together until light-colored. Add eggs, one at a time, until fluffy and then add vanilla. Combine flour, cream of tartar, baking soda and salt in a separate bowl. Mix dry ingredients into butter mixture. Recipe Share: Bacon Vegetable Pumpkin Soup

This is one of my very favorite soups from my friend Elizabeth's blog . The flavors are so bright and so yummy. You'll be wanting to eat it all winter long.  Here's the recipe .  1/2 pound bacon, chopped 1 medium onion, diced 3 stalks celery, diced 3 carrots, peeled and sliced 1/4" thick 1 red pepper, diced 4 cloves garlic, minced 1 teaspoon thyme 4 small potatoes, peeled and diced small 6 cups chicken stock 1 (6 ounce) can tomato paste 1 (15 ounce) can pumpkin puree 1 pound fresh green beans 1 1/2 teaspoons Italian seasoning 1/4 teaspoon crushed red pepper 1/2 teaspoon cracked black pepper 2 teaspoons kosher salt In a large pot, cook bacon over medium high heat. Remove from pot and drain on paper towels. Set aside (do not drain bacon fat). Add the onion, celery, carrots and red pepper and saute, scrapping the bacon drippings, for about 5 minutes.
