Recipe Share: Chicken, Avocado, and Lime Sandwiches


 I make this meal so often; I love it. It's so tasty and satisfying. My friend, Elizabeth is the creator of this recipe. I love all of her recipes. Check out her blog here. 

Here's the recipe.

4 chicken breasts (I actually like to slice two breasts in half because they're so large)
4 slices Swiss cheese
2 avocados, sliced
2 tomatoes, sliced
4 Kaiser rolls (or hamburger buns) - I like to use Orowheat Sandwich Thins, toasted
1 lime
Dressing (recipe below)

Drizzle chicken breasts with canola oil and season generously with salt and pepper (you can also marinate the chicken in lemon/lime juice, oil and salt and pepper for a few hours but I often don't think ahead that far in advance). Grill chicken until almost done (this takes me about 10 minutes because I half mine). Place cheese slices on top of each breast for the last few minutes of cooking until melted and bubbly. Remove from grill and squeeze lime juice over the chicken. Toast the buns and spread with dressing. Add chicken, avocado slices and tomato.

Dressing:
2 Tablespoons mayonnaise
Zest of 1 lime
Juice of 1 lime
1 teaspoon Worcestershire sauce

Combine all together in a small bowl and mix well. Set aside until ready to use.

Friendship themed Relief Society Dinner.

How we do chores.

I was searching the internet a few months ago for some ideas on creating a chore schedule for myself and my kids that would help us to keep our home clean. I tend to get into the habit of letting things get really dirty and then doing a major scrub down for a few days that leaves me exhausted and cranky. I thought there had to be a better, more manageable way. And then I found an idea to make a 7 day chore schedule that went along with the days of the Creation in the Holy Bible. I thought this was a great idea and so creative, which I always appreciate. So, I sat down with my hubby and kids and we brainstormed ideas of how this could be done. We broke down each day and what we could do. And then I found pictures online that went along with our chores and typed up these pages. After laminating them, they were ready to go! Father's Day Gift Ideas.

Father's Day is coming up!  We love our Jason, and we like to surprise him with special gifts.  I wanted to share a few things my kids and I have loved doing for Jason. These Pinhole Press board books are so adorable and easy to do. The kids love looking at them, and Jase cried when he first saw them. They made his day! Making a slideshow for your special guy is also a great idea! We made one for Jason a few years ago, and it was so special and fun. There are many different sites you can use to do that.
