Recipe Share: Spinach & Ricotta Stuffed Chicken with Mashed Cauliflower

I've been doing the Jillian Michaels' exercise DVD's for months now. I thought I'd give her recipes a try to that came with the DVD's. This recipe was so tasty. I really loved it and will definitely make it again.
Ingredients:
Spinach & Ricotta filling:
1 C. part-skim ricotta cheese
1/3 C. reduced fat organic Parmesan cheese
1/4 tsp. garlic powder
1/4 tsp. freshly ground pepper
1 (10 oz.) package frozen chopped spinach, thawed, drained, and squeezed dry
1 large egg

Chicken:
6 (6 oz.) skinless, boneless chicken breast halves
1/2 cup dry white wine (I just used chicken broth)

Directions:
Preheat oven to 350 degrees. To prepare filling, combine all filling ingredients. To prepare chicken, place each chicken breast between two sheets of heavy duty plastic wrap, pound to 1/4 inch thickness using a meat mallet or rolling pin. Divide and spread filling evenly over chicken breasts. Roll up jelly-roll fashion. Tuck in sides. Place chicken, seam side down, in a 13X9 inch baking dish. Pour wine (or broth) over chicken. Cover dish with foil. Bake for 30 minutes, basting chicken with wine (or broth) every 10 minutes. Uncover and bake an additional 15 minutes or until chicken is done. Remove chicken from pan; keep warm. Strain wine mixture through a sieve or bowl; discard solids. Serve wine mixture over chicken.

For the mashed cauliflower:
6 cups cauliflower florets
3 Tbsp. butter
1 1/2 fluid oz. half and half
1/4 tsp. freshly ground pepper
can increase or decrease as desired

Steam cauliflower until soft. Puree in a food processor, adding butter and half and half. Season with pepper.

(These are the exact directions given in my Jillian Michaels' recipe book. When I made it I found the dish needed more seasoning for my taste. I added salt and red pepper flakes to my spinach/ricotta mixture, and I added salt , pepper, and a little more butter to the cauliflower. I also added chopped flat leaf parsley over the dish at the end.)

Friendship themed Relief Society Dinner.

I spent a lot of time planning for our big Relief Society dinner/Visiting Teaching Conference. After tossing around a lot of ideas, I finally settled on the theme of friendship. She designed these awesome invitations and helped me so much as I planned the décor . Another sweet friend, Katie, helped me with the food.. we decided to have it catered by Kneaders. I bought this adorable polka dot teapot there that I just knew I wanted to use. Party 101.

I remember when my oldest son was 4 years old, and I wanted to plan a birthday party for him. I was overwhelmed with how to go about planning a birthday party for little kids. I wasn't sure where to start. All I knew was that he really wanted a Thomas the Train theme. Cohen, at his Thomas party. Up until then, we had always done birthday parties with family only, and they were simply eating a meal (often at a restaurant), opening presents, and having cake. This would be our first friend birthday party, where we'd have to plan activities and food for all the kids. I so wanted to have a party that was memorable for my son and his friends.  I emailed a friend of mine and asked her for advice. She gave me some great tips that I've used in all my parties since. Kid's bedroom series: Cohen's Captain America themed wall gallery.

Cohen's gallery wall is up! It's taken me a while to gather everything and get it up the way I envisioned.  I love these photos from Cohen's baptism day so much; I had to include them.  And here's his brother print my sis designed. Love it so much.   The Captain America piggy bank is from the same American Nostalgia store I mentioned in my previous post. That store was so fun! I had a hard time limiting my purchases when I was there. The photo here of the boys at Mission Beach looking for sand crabs is one of my all time favorites of them.   This geometric canvas I found just recently at Target. I also bought a green version for Ren's room, of course. I will post more pics of Cohen's rooms soon. It is almost complete! Wahoo!
