Recipe Share: Basil Burger with Grilled Corn on the Cob

For those of you that have seen Next Food Network Star, this recipe comes from a winner on that show, Melissa D'Arabian. I really like her, and I really loved this recipe. The basil sauce and using an English Muffin for the bun made this burger so unique and yummy. It's a perfect summer time meal.
Here's the printable recipe.

Ingredients:
1 1/4 lbs. ground beef (80% lean)
kosher salt and freshly ground pepper
1 Tbsp. vegetable oil
1/4 cup shredded mozzarella
4 English muffins, halved horizontally and toasted
1 tomato, sliced and lightly salted
2 Tbsp. grated Parmesan

Basil Sauce:
1 green onion, chopped
3 Tbsp. roughly chopped basil
1 large clove garlic, minced
1/2 cup mayonnaise
3 Tbsp. sour cream
1/2 tsp. Worcestershire sauce
kosher salt and freshly ground black pepper

Directions:
Quarter the beef into even portions. Form into burgers, indenting the middle slightly with your thumb. Season with salt and pepper, and brush lightly with vegetable oil. Cook on a hot grill until charred on the outside and pink on the inside, about 4 minutes per side. Two minutes before removing the burgers, top the burgers with the mozzarella cheese.

Place the toasted muffins on a serving platter. Place the tomato slices on the bottom, and top each with cooked patties. Spread a tablespoon or two of the basil sauce on each bun top and sprinkle with a little Parmesan cheese. Serve extra basil sauce on the side for dipping.

Perfect Basil Sauce:
Blend the green onion, basil, garlic, mayonnaise, sour cream, and Worcestershire sauce in a blender until creamy and pale green. Taste the sauce and season with salt and pepper, if needed.

How I make my grilled corn:
Husk the corn, and place directly onto grill grates that are heated on medium. Turn them every 2 minutes for a total of 10-12 minutes. When the corn gets some color from the grill and the kernels look plump, they are done. Butter, salt and pepper to taste.

Enjoy!!

Friendship themed Relief Society Dinner.

I spent a lot of time planning for our big Relief Society dinner/Visiting Teaching Conference. After tossing around a lot of ideas, I finally settled on the theme of friendship. I saw this Mary Engelbreit illustration and quote that I loved, and it became the basis for the whole night. I had so much help from Jaime, my sis. She designed these awesome invitations and helped me so much as I planned the décor . Another sweet friend, Katie, helped me with the food.. we decided to have it catered by Kneaders. We had to go eat there to really look at everything and decide.. ;) We even tried some desserts just to be sure.. it was fun, fun!! I bought this adorable polka dot teapot there that I just knew I wanted to use. Another dear friend, Sarah, who is crazy talented by the way, went with me to Hobby Lobby and The Dollar Store with me for frames, vases, and other décor.. we found these adorable artificial fruits that ended up being perfect for the theme. I'd printed out ...

How we do chores.

I was searching the internet a few months ago for some ideas on creating a chore schedule for myself and my kids that would help us to keep our home clean. I tend to get into the habit of letting things get really dirty and then doing a major scrub down for a few days that leaves me exhausted and cranky. I thought there had to be a better, more manageable way. And then I found an idea to make a 7 day chore schedule that went along with the days of the Creation in the Holy Bible. I thought this was a great idea and so creative, which I always appreciate. So, I sat down with my hubby and kids and we brainstormed ideas of how this could be done. We broke down each day and what we could do. And then I found pictures online that went along with our chores and typed up these pages. After laminating them, they were ready to go! I keep them in a file folder my kids can easily reach on the kitchen counter, and each morning one of them will put up the chore page for the ...

Father's Day Gift Ideas.

Father's Day is coming up!  We love our Jason, and we like to surprise him with special gifts.  I wanted to share a few things my kids and I have loved doing for Jason. These Pinhole Press board books are so adorable and easy to do. The kids love looking at them, and Jase cried when he first saw them. They made his day! Making a slideshow for your special guy is also a great idea! We made one for Jason a few years ago, and it was so special and fun. There are many different sites you can use to do that. One that I've used recently is Smile box . It does cost money to use, so be aware of that. You can also use free sites or simply make one using google slides or iMovie. Etsy has some great gifts for Dads.  Look at this awesome tee set for a Dad and child. So cute! I love this modern watch/jewelry stand . So manly and clean looking. This docking station is equally awesome. For the Dad who enjoys cooking, you could get him one of these personalized cutting boards . Love ...
